Summer Squash Fritters


If you’re like us, you’ve had squash coming out of your ears for the past few weeks. We typically blanch and freeze quarts for use in squash casseroles throughout the year, but there is nothing better than picking veggies out of the garden and cooking them the same night. We do get tired of grilling and sautéing them after awhile, though. Here’s a new twist on summer squash- summer squash fritters.

You’ll need:

  • 2 medium squash, grated
  • 1/4 c flour
  • 1/4 c corn meal
  • 1/4 c panko bread crumbs
  • 1/4 c fried onions
  • 2 eggs
  • 1/4 c cheddar cheese
  • Salt
  • Pepper
  • Garlic salt
  • Canola oil

Grate your squash (we put it through our grater on our food processor- think hash browns.) Put enough oil in your skillet to coat the bottom and start heating the oil on medium heat. In a medium bowl, mix all the remaining ingredients with the grated squash. Drop clusters of your mix into the skillet and fry both sides until golden brown.

Serve with sliced tomatoes for a simple summer treat!
