Sweet Potato Nachos

In preparation for the best rivalry in college sports aka the Carolina/Duke game (GO HEELS!) we whipped up one of our favorite recipes. It’s a healthy-ish twist on nachos with lots of flavor. Beware- this recipe is addictive! When I shared with my mom she ate it non-stop for weeks.


What you’ll need:

  • 1 lb ground chicken
  • Taco seasoning packet
  • 1 tbsp tomato paste
  • 1 can diced tomatoes (with jalapenos if you like spicy foods)
  • 1 tbsp coconut oil
  • 1 cup plain greek yogurt
  • Sharp cheddar cheese
  • 2 avocados
  • Guacamole mix (unless you’re making your own)
  • Green onions
  • 1 bag sweet potato chips (or you can make your own sweet potato chips- but we typically skip out on this because it is time consuming)

Put a tbsp of coconut oil in a large pan. Add the ground chicken and taco seasoning mix. Cook thoroughly (my mom actually cooks the chicken first when she makes it then adds the seasoning so she’s sure the chicken is cooked thoroughly). Once the chicken is cooked, add the tablespoon of tomato paste. Drain off the can of diced tomatoes and add it as well. While the chicken simmers I usually mix up the guacamole mix and avocados (we typically make our own guac unless its a week night and we are in a rush but the guac seasoning packets are great too). Once the guacamole is made, everything is ready! Pile on the chicken and guac to your sweet potato chips, add a dollop of plain greek yogurt and a sprinkling of green onions and cheese and enjoy!
